Chocolate Protein Muffins

Health fads come and go. I have been a faithful member of the Weight Watcher philosophy for years now. The program has gone through some fine tuning, and with the change of name to WW, the idea is to get away from the number on the scale and focus on health with food choices, activity and mindset. All members of WW can get pretty creative making the most of their “point allowance”. With a limited amount of points a day, you want to get the best bang for your buck. Bottom line is…lean protein is low in point value and sugar and high saturated fats bring the point level up. Since eggs are a “0” point food on the plan, I eat a lot of eggs for breakfast. But sometimes I don’t have time to whip up scrambled eggs (the only way I’ll eat em) and I need a grab and go option. This muffin does the trick and if you follow the WW program it’s one measly point.

Start by mashing 2 bananas in a bowl. The riper the better. I’m talking about the bananas that you need to throw out cause they are almost black. Those are best.

Add 2 eggs and mash it all together. Add a teaspoon of vanilla.

To this you add the Kodiak dark chocolate pancake mix. This stuff is awesome and comes in several flavors. It’s high protein pancake mix and every person who follows WW knows about this pancake brand. Add in some non fat plain greek yogurt and sugar free instant pudding mix and mix well.

Divide it into 6 muffin cups. I use an ice cream scooper for even distribution. I have found that these muffins really stick to paper liners, and when you go to peel it off you lose a good bit of muffin. No good. So instead, I give the muffin tin a good spray and bake them without liners.

Now I will say this. This is not the best muffin you will ever eat. I’m not selling that. It works. It’s got a good chocolate flavor but not very sweet. If you want an insanely good chocolate muffin, head to Dunkin Donuts or a good bakery, but the calories and fat will do you in. I do add 4-5 chocolate chips on top of each muffin to amp up the chocolate without doing much damage.

Pop them in the oven at for about 23 minutes and done!

CHOCOLATE PROTEIN MUFFINS

  • 2 very ripe bananas
  • 2 eggs
  • 1/2 cup of Kodiak double dark chocolate baking mix
  • 1 tsp. vanilla
  • 2 tlb. non fat plain greek yogurt
  • 2 tlb. of sugar free instant chocolate pudding
  • 25 chocolate chips (optional but worth it)

Preheat your oven to 350 degrees.

Mash the bananas in a bowl until well mixed. Add 2 eggs and mix well.

Add the baking mix, pudding mix, yogurt and vanilla.

Stir to combine well.

Divide in a 6 muffin cup tin. Put 4 or 5 chocolate chips on the tops of the muffins if you use them.

Bake for 23 minutes. Let cool, and remove from the tin.

*I wrap mine individually and throw them in my freezer and grab one for an on the go breakfast with a piece of fruit.
